a Hash function is a is a way to combine a large amount of data to a result which is allot smaller.
Like a Md5 checksum.

E.G taking the content of a file and convert it to a number which is later comparable after a download to see if it was downloaded correctly.
It can also involve encryption.

You shouldnt be asking which hashes windows 7 use rather ask which encryption standards does windows 7 use.
And its not just using one it depends what needs to be done.

NTLMv2, most likely; NTLMv1 and LM were deprecated by default as of Windows Vista. If the machine is on a Windows Server domain, then it will likely be using Kerberos instead.
