Bangers and Mash
My dad has expressed the desire to consume some Bangers and Mash. No biggie, got the bangers and I'm sure I can manage some mash and a sauce to go with.
Question though - do I dish up veggies with it or not?

Food recipe sharing thread
I'm not sure if a thread like this already exists, but let's use this thread to share some recipes.
I'll start with a very basic and easy one:
Curry and Rice
600g+ minced beef
100g+ cube-cut lamb belly
3 medium potatoes, skinned and coarsely diced (2x2x2 cm cubes about)
large onion, cut into thick wedges (like 12 pieces cut through the poles)
sachet of tomato paste
3 tomatoes, coarsely diced (I leave the skin)
large dollop of apricot jam or apricot chutney (like 2 or 3 tablespoons at least)
tablespoon of vinegar
teaspoon of garlic (or to taste)
1.5 - 2 tablespoons of medium Raja curry powder
pot of white rice (1.5 - 2 cups boiled in lots of water until sticky)
Salt and spice to taste
Serves 3 - 6, depending on appetite.

Re: Food recipe sharing thread
One of my personal favourites.
Horse meat kabobs
Recipe ingredients:
48 cubes horsemeat filet mignon, about 1 1/2 in. (3.5 cm) thick
12 wood skewers
3 red peppers, cubed
2 onions, quartered
24 mushrooms
Marinade
1/2 cup (125 mL) extra virgin olive oil*
1 can (355 mL) Dry beer*
2 sprigs rosemary
3 garlic cloves, chopped
3 Tbsp. (45 mL) maple syrup or liquid honey*
1 Tbsp. (15 mL) soya sauce*
1 onion, sliced
1/4 cup (60 mL) marinated whole green peppercorn, crushed
Salt to taste
Preparation:
Thread cubes of horsemeat and vegetables alternately onto the skewers.
In a dish, mix all the ingredients for the marinade; add the kabobs and let them marinate 30 minutes in the refrigerator. Cover.
Preheat the barbecue to medium. Drain the kabobs. Set aside the marinade. Brown kabobs on the barbecue 6 to 8 minutes, turning frequently. Bring the marinade to a boil for about 10 minutes. Skim and reduce by half.
Pour the sauce on the kabobs. Place the kabobs on white rice.

Re: Food recipe sharing thread
I'll take your word for it since I haven't tried it myself but the recipe gave away that I've seen it before and thus probably another thread since I don't know of that many horse recipesrustypup wrote:nothing wrong with horse flesh... :/

Re: Food for thought (The food thread)
Does this count as a thread necro against the blue one? And yes I'll shutup now since I don't have a recipe to contribute at the moment

Re: Bangers and Mash
Since I am back, at least for now it might be a good time to answer your question, as well as necro this thread, and start updating again.doo_much wrote:My dad has expressed the desire to consume some Bangers and Mash. No biggie, got the bangers and I'm sure I can manage some mash and a sauce to go with.
Question though - do I dish up veggies with it or not?
Just some notes first.
Bangers just like wors should be defrosted completely to avoid any water during cooking process,if there is any water you can simply drain the water into a cup, for use for making the sauce for the mash.If you don't have the time to wait till they defrosted, rather than pan frying, grill or bake in a tray with holes to drain any liquid.
Reason for this moisture tends to make the skin tough, which doesn't taste all that great.
For the perfect mash.
After draining and while mashing.
Add a little butter
Add salt to taste
Add a half a table spoon of baking powered per two cups of potato's, this will make the mash light and fluffy.
A little milk instead of kettle water can be used, if the mash is too dry, this will also help to make a better consistent mash.
For the sauce.
1 x medium onion per 2 person serving
2-3 plain sugar.
4 x table spoons Bisto
Water and dry/semi sweet wine
Warm up a pan with enough oil (don't use butter)Pan should be hot
Peel and slice onions in rings.Fry onions for a 2-3 minutes, add sugar (the object here is to caramelize the onions)
After frying the onions with the sugar till it's brown a sticky, usually about 2-3 minutes.
Add two or three dashes of wine, and cover the rest of onions with water, just so the onions are covered in liquid.
Reduce heat to low.
Mix the bisto with some water, to make a slightly watery paste, with a whisk add the bisto/water paste to the onion mix, continually stirring to avoid the mixture clotting. If the sauce is too thick a little more water can be added, it should be too runny but also not too thick.Let it simmer for a few minutes stirring every now and then, if the sauce gets to thick add a little water again, cook until the onions are nice and soft. -+ 10 minutes. Serve hot.
Salt to taste.
